Chocolate Cake sans Eggs


Its been a while since I wrote my last post. Life has been quite hectic for a while now (read as between working, cooking, lazing around & talking on the phone - not much time left)..


Last week my friend Sravanthi wanted a eggless cake recipe to make for her son, the little cutie - Googlee... I realised that I had tried some eggless cakes earlier.. So I thought I'll write about making a eggless chocoloate cake.


This recipe is meant for all, especially the vegetarian chocolate lovers. If you read the recipe, you will realise how simple it is to make & its quite easy to get it right too :)


So before the recipe, as usual the story of how 'it' happened.. 


One nice evening when Appu (Aparna Sree) dropped in, we both realised how much we missed eating chocolate cakes. Actually I think I had just recovered from the overload of cakes from Friday parties at Irevna ;)


So, we decided we'll look for an easy cake recipe (since we both didn't want to put in so much of effort) & if we have all ingredients at home, we'll make it too.. Alas, but I was out of eggs at home & you know how it is... A lot of cake recipes required eggs :(


We prepared for our quest and in minutes we were out on our challenge for the week. Finding the cake recipe which would fit the ingredients available at home.. After a while of googling & browsing through recipes, we found our recipe.. Still we were missing a few things, so decided to substitute the ingredients with their counter-parts.


Appu soon revealed the secrets of making an awesome cake. I didn't know that she could cook, leave alone make a cake!! 


Here is the recipe of the cake we made.


Ingredients:
2 cups sugar – (Powder it before hand)
3 cups Maida/Plain Flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup cocoa powder   
2 cups water
1 cup oil (if you are adding butter, reduce the oil)
2 tablespoons vinegar (if you do not have vinegar, add 1 tbsp lemon juce)
1 teaspoon vanilla extract
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix sugar, flour, baking soda, salt and cocoa.
  3. Add water, vegetable oil, vinegar, and vanilla. Beat until smooth. This cake doesn’t need too much whisking, still the more you beat, softer the cake is :)
  4. Pour into a pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until toothpick inserted into center of cake comes out clean.

You can also add nuts (cashew/almonds) to your cake.

Now for the Pro - Aparna Sree tips
  • Do not let the mix stand out for long. If you are quick at whisking or have a hand mixer at home, start the oven first for pre-heating and then start mixing the ingredients
  • Before you pour the cake mix into the mould, grease it with oil/butter along with little flour
